Pineapple Mojito Cocktail Recipe

This summer cocktail recipe will take you about 15 minutes to make at the most (I’d say ten but I don’t want you to rush and chop off your hand). Make sure your pineapple is very ripe so that it’s extremely juicy. You’ll also need limes, mint, and sugar. This mojito recipe is untraditional in that I don’t add any soda water. Of course you can add it if you’d like- just do so in each individual glass instead of the pitcher.

Directions: Cut off the sides and ends of the pineapple, then slice into ½-inch discs. Add to the pitcher. Slice the limes and separate into two piles. In a separate measuring pitcher, muddle the rum, half of the mint, half of the limes, and sugar until the sugar has dissolved. Strain into the pitcher with the pineapple, then add the remaining limes and mint. Chill until cold and serve.

The looks great but I wonder how many servings can there be?

    • Admin says:

Hi Lola! You will get about 6 servings from this recipe. If you have a larger pitcher, use an entire bottle of rum and double the other ingredients to get 2x as many servings. Enjoy! It’s one of our all-time favorites.

Hi im am about to make this recipe for our upcoming function, do u have any idea for the mixture for this cocktail 60-80pax?

Hi Lanne- Sorry we missed this comment from last week! You can always send us an email through our contact page or via Twitter: @GirlWalksIn2Bar.

The safest best is usually to multiple each ingredient by the number of people attending. Half a bottle of rum is about 12.5 ounces. We’d say that this recipe serves 6 thirsty people, so you can multiple this recipe by 10 for 60-80 people. Let us know how it turns out! XO J & J
