Mimi Avocado’s Cheddar & Onion Biscuit Bites

If you’re looking for the perfect breakfast addition to your next brunch, Mimi Avocado from MimiAvocado.com has created these tasty and savory little cheddar & onion biscuit bites. They’re about as homemade as you can get, as the avocado that’s called for in the recipe is grown right in her backyard.

Mimi and her husband own an avocado ranch located in north eastern San Diego.  Although you’re probably already buying her avocados from the market, you can also order them straight to your mailbox here. It’s a fourth-generation family business that her entire family is involved in.

We first met Mimi at The Big Traveling Potluck 2 in the spring of 2014 and have been following her on Instagram ever since. Then, earlier this month at our book launch in San Diego, we got to see her again over dinner and drinks at OB Warehouse in Ocean Beach. She’s one of the sunniest people we’ve ever met and can easily convince you that an avocado is the best food on earth. We won’t argue with that.
