It's Easter! So using carrot juice in a few drinks seems highly appropriate. Carrot juice is naturally sweet and of course, very healthy. When you're experimenting on your own, try to think of this ingredient more as a fruit juice. You may still find that you need to add a sweetener like a simple syrup, or an actual fruit juice, but you may also just like it alone with the spirit. Make the carrot juice on your own or buy it ready made from the market (make sure it's organic).
