The color alone is amazing enough to make you want to spend the rest of your life on an island surrounded by dragon fruit plants. It's beautiful on the inside and the outside. The dragon fruit we purchased wasn't as sweet as we had hoped, or flavorful, so look for a few more recipes before the end of August as we use a better product. To compensate for this, we just added a little more simple syrup and lime juice, as well as a premium vodka.
Directions: Slice and peel the dragon fruit. Muddle the flesh with the vodka, then strain into a shaker. Add the simple syrup and lime juice, then mix well. Strain into a glass with ice and serve.
